Long Islanders have had a long love affair with diners. The huge menus with all kinds of cuisine at any hour of the day makes them the perfect place to eat day or night. One of my favorite meals to order is pancakes - an icon diner favorite. Their other names are 
griddlecakes, flapjacks and their tinier versions are known as silver dollars. Whatever you like to call them, one thing can be agreed upon by everyone - they are delicious for breakfast, brunch, lunch, dinner or a late-night snack. The possibilities are endless with the size silver-dollar, short stack, buttermilk, organic, whole wheat, bran, and gluten-free. When you start to consider the multitude of different toppings such as chocolate chips, fruit, nuts, whipped cream, and raisins or the possibilities seem endless. There are many syrup flavor options too - if there's one thing that hold true about all pancakes, is that this is a versetile meal that can suit the tastebuds of even the pickiest eater.
Pancakes have been eaten since the beginning of the 17th century. Shakespeare even mentions them four times in All's Well That Ends Well and As You Like It. I am sure that they were not exactly the same delicacy that are served up in these top diners, but their legend hasn't faded since those days of yore.
