Debbi's Amazing Apple Kugel Recipe

A wonderful recipe shared with us by Debbi of St. James, especially if you are going apple picking in the upcoming weeks. Nothing beats handpicking apples, then turning them into a delicious creation for the entire family to enjoy. Make sure to share this fall favorite with your friend and family, it is sure to become an instant classic!

Apple Kugel (Kugel is the Yiddish word for pudding)
  • 3 cups Matzoh Farfel
  • 3 eggs, well beaten
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1/4 cup melted butter or margarine
  • 1 teaspoon cinnamon
  • 1/2 cup chopped walnuts
  • 4 large apples, peeled and chopped
  • 1/2 cup raisins
Preheat oven to 350*
 
1.  Moisten Matzoh Farfel in a colander under water until just soft.  Drain excess water.  Set aside.
2.  Beat eggs.  Add sugar, cinnamon, and salt.  Add melted butter or margarine and continue beating until well blended.
3.  Sir in Matzoh Farfel, walnuts, apples and raisins.
4.  Place mixture in a well-greased 2 quart casserole or pan.
5.  Bake in oven for 45 minutes or until lightly browned.
