Seeking a GREAT Authentic Chinese Restaurant

My friends and I write a blog and review Chinese restaurants. We've eaten at a lot of good ones, but we're sure that there are a lot of hidden gems still to be found on Long Island.

What are some that you can recommend for us to review?

Give Monsoon in Babylon a try. They're pan-Asian, and of course feature a number of Chinese dishes, but they're much more a fusion of traditional Asian cuisine and modern style than the typical Californian-style Chinese restaurant you'll find in every town. I've also heard good things about The Orient in Bethpage and Red Tiger Dumpling House in Stony Brook, but I haven't had a chance to visit either yet.
