1 lb. Raw Prawns, peeled & deveined, tails intact shredded Lime Rind, to garnish 1 tbsp. Sesame Oil 8 oz. Scallops, halved 1/4 cup Fresh Coriandar, chopped 1 lb. Shell Pasta 4 sliced Spring Onions 1 tbsp. Fish Sauce 1 small Chilli, finely chopped 2-3 tbsp. Light Olive Oil 1/4 cup Lime Juice 2 tbsp. Sweet Chilli Sauce
Directions
1) Cook the pasta in a large pot of rapidly boiling salted water until al dente.
2) Heat oil in a pan and add onions, chilli, prawns and scallops. Stir constantly over medium heat until the prawns turn pink and the scallops are lightly cooked. Remove from the heat immediately. Stir in the coriander, lime juice, chilli sauce and fish sauce.
3) Drain the pasta and return to pan. Toss the sesame oil through, add the prawn mixture and mix gently to combine. Serve the pasta garnished with lime rind, if desired.
