1 cup Milk Dash of pepper 1/2 tsp. Salt 2 tbsp. Flour 2 tbsp. Butter 3 cups Crab Meat, fresh or canned 2 Eggs, separated 1/4 tsp. Paprika 1 cup Heavy Cream
Directions
1) Remove any remaining shell or cartilage from crab meat.
2) Melt butter; blend in flour and seasonings. Add milk gradually and cook, stirring constantly, until sauce is thick and smooth.
3) Beat egg yolks, and stir a little of the hot sauce into yolks; add to remaining sauce, stirring constantly.
4) Add paprika and crab meat. Whip cream, and beat egg whites until stiff. Fold egg whites and whipped cream into crab mixture.
5) Place in 6 well-greased, individual 10-ounce casseroles. Set casseroles in a shallow pan of hot water. Bake in a 350 degree F oven for 40 to 45 minutes, or until puffs are firm in the center. Serve immediately.
