Tomato and Basil Pasta Salad

    Ingredients

    • 4 Roma (egg) Tomatoes
      2 oz. Prosciutto
      1 tsp. soft Brown Sugar
      1 lb. Penne Rigate, cooked
      1/4 cup Fresh Basil
      1-2 cloves Garlic, crushed
      2 tbsp. Olive oil
      1 tbsp. Balsamic Vinegar

    Directions

    1. 1) Combine the penne, basil, garlic, oil, vinegar, brown sugar and salt and pepper to taste.

      2) Cut the tomatoes into wedges and toss with other ingredients until well distributed.

      3) Grill the prosciutto until crisp, crumble into small pieces and sprinkle on top of the salad before serving.

    Versatile recipe, may be enjoyed chilled or warm. The prosciutto is a great topper.
