For the griddle, Corn oil 2 cups Flour 1/2 cup chopped Pecans 5 tsp. Baking powder 2 tsp. Salt 3 tblsp. Sugar 2 cups Milk 5 tblsp. melted Butter 2 beaten Eggs 1 can Pumpkin
Directions
1) Sift together flour, baking powder, salt and sugar. Combine milk, butter and eggs and add to flour mixture. Add pumpkin and pecans and stir until fairly smooth.
2) Heat griddle or frying pan to moderately hot and grease lightly before cooking each batch of pancakes. Use approximately 1/4 cup butter for each one. Cook until bubbles form and begin to break on top. Flip and brown other side.
